i don’t really like pork. i don’t eat it too often. might be that i had too many pork chops in my early 20’s or i’ve eaten too much of what bourdain constantly drools over when i was growing up — roast pig cooked outdoors, open flame, golden, and stuffed with an apple in its mouth when done.
i like bacon but what’s prepared here is pork thigh cooked in the simplest form. seasonings aren’t rubbed but dusted.
the basics: salt, pepper, garlic, onion and paprika powder. cooked in two parts: one part in the oven, second on the grill.
when completely cooked and done right, the skin will be crispy and the meat will fall off the bone like pulled pork.
some prefer barbecue sauce but here is a simple dipping sauce: soy, vinegar, crushed garlic, and jalapeño for a little heat. the salsa is sweet peppers, onion, tomato and olive oil.
the cooking process took hours, enough time to have watched the canucks lose to the bruins. weep. i still don’t really like pork even after eating such a delicious meal.
